Thanks Doctor - Limited experience on the cider front, but liked the results (mostly).

What temperature does pectin set? And what non-fermentable sugars/sweeteners would you add for just that...

That's part of the reason I've been working in smaller batches (1-3 gal).

If you're careful racking it off that yeast, a "secondary" would prolly do the trick without crashing the yeast out.

The MA33 does a nice job of maintaining apple flavor and I generally cold crash for a couple days to bring the yeast out of suspension...

Temperatures in the 90s are still "cool" enough.

Temperatures below freezing make you wanna light that propane burner.

Yeah... definitely was inhibited by exhaustion at the end of a long work day and simply thought he meant whole as opposed to pelletized. It's still a pretty heavy billing though assuming the 1.070 OG...

You should check the manufacturers info for its precise tolerance, but a gradual temp increase...

Agree that you'll want to carbonate to style.

Properly chilling the beer and using very cold glasses won't knock out the CO2, but will help keep it in solution so you won't be "fizzy".
