Thanks for the reply. Yeah I want to be sure to keep the Kölsch style. I know that this also means keeping it in the styles ABV, but I thought it would be fun to try.

I've never heard of this technique. What does "crash cool" mean? It sounds fast and hard, but over 5-7 sounds slow haha. You still keep it at a lower temp correct?
