So we just switched over to all-grain and are having some issues with efficiency. I'm using Brew Pal for iOS (which is awesome) to do the math and have been using the default 75% efficiency setting....

I recommend wy3068 - it's the weihenstephaner hefe yeast. Low 60s will give more clove, mid-low 70s will give more banana and bubblegum. So high 60s - 67-68 or so - should give a nice balance.
