My theory as to why this is happening is that...

My theory as to why this is happening is that perhaps I'm not getting enough LME out of the canister. Would this explain the difference?

Adding water and OG

So, in the past when I've made a 5 gal. batch from a kit, I would follow the directions, do a partial boil, and add water in the end to bring it up to 5 gal.

Then I bought a refractometer.

How do I add missing ingredients

I've been fiddling around with BeerAlchemy and BeerSmith and I can't figure out how to add ingredients that aren't preset.

Anybody know how this is done?

I can't boil more than 4 1/2 gallons, so how can i determine what a good boil volume would be if I were doing a partial boil?
