Agreed you have too much RB, Carafa, and Crystal in there. It will borderline sharp with roast even after it mellows with aging. Not to mention having a really hard time...

Thats exactly what I thought in the past too. But it seems to be the opposite. Bigger air gap seems to carb quicker and possibly to higher levels for many people.
