10 days seems to be sufficient for carbonation, not sure why it didn't get more. I would up the pressure only after checking all the seals (assuming you are kegging in soda kegs) and give it a shake...

At this point, I personally put the beer into a secondary and add Knox gelatin for a few days. It helps clarify the beer prior to bottling. (in addition to cold crashing). Just my opinion.

I used stainless steel wire. Wrapping the wire around a sharpie marker I created a spring-like coil and inserted inside the braid. Super tough and will not crush.

Greetings from Coronado CA. New brewer here setting up to retire to Biloxi MS. Rumor has it that it still isn't legal to home brew in Mississippi, but I still haven't found definitive proof one way...
