I thing o2 is more of a problem than heat. I would be tempted to say sour the wort in a 5 g carboy if you cant really seal off the mash. A corney would be great for a mash.

You are correct, we use a totally separate tank...

You are correct, we use a totally separate tank for the herms water.

The first sparge water in is at 200 only to help raise the temp faster. The second one is at 168. The tun never gets warmer...

How do you clean your brew rack

I am thinking of hard plumbing my rack. Currently it has silicone hoses and cam locks. I like the idea of not moving around hoses when I want to chill or sparge .....ect. Is just running PBW...
