I added 1/2 packet of S05 to my priming solution...

I added 1/2 packet of S05 to my priming solution for a 6 gallon batch of Bourbon Ale. Hoping that does the trick.

On a high gravity beer with a big grain bill, is it ok to rinse the grains more to get more of the sugars? I thought maybe an extra gallon of sparge and then boiling the wort to the right volume...

I don't know if you could get a big enough starter by the weekend. I would go dry with 2 or 3 packets in this case. I normally like a big starter if time permits.

I like the sound of that idea, any idea how to calculate the yeast count on that? Or doesn't it matter because it will be more than enough? White Labs recommends their Irish Ale strain.

Yes, you must come up with an accurate measuring proceedure. If you add extra to your mash to adjust temperature, be sure to minus that amount from your sparge water.

If your numbers are that consistent, BeerSmith efficiency is set too high. My methods and water additions require I set it at 65% and hit my numbers.
