I use Northern Brewer for the bittering because the kettle loss is crazy with the amount of Saaz it takes and there is less chance of "grassiness".

I'd try relocating the DC supply to that empty spot of DIN rail to avoid wire tying the low voltage line along side that AC line. Also, If you are getting EMI, go into EMI suppression wiring mode...

Your post confuses me. You say you can't do AG but your grist has ingredients generally not considered to be steeping grains. Are you going to be doing a mini-mash?

You could always drive it with belts and adjust with the pulley ratio. Like 1:3... Most people I think are using 1750rpm motors and 10:1 pulley to be around 175rpm. Just do it backwards :D
