I don't know how bitterness in a mead would be, but a local meadery does two hopped meads that are just dry hopped and they are both fantastic.

I'm only on my third batch, so I'm no expert. On the previous two, I was able to pull the mold layer off in one piece before I harvested. I doubt that it was necessary, but it was easy enough to do.

The pressure in a co2 tank is much higher than a standard air compressor would put out. I imagine these would fail in a pretty dramatic way when you shove 800psi into them. Maybe not though.

Yeah, I think the venue will be the biggest roadblock. I offered to brew for my brother-in-law's wedding, but he was unable to provide his own beer. I brewed for his rehearsal dinner instead.
