Yes, I plan on eventually going with a RIMS system but the setup I'm waiting to build is a quite a bit more expensive than that. The heat stick was for minor adjustments and heating to mash-out.

5 gallon batches? If so then you're not doing a full boil which I would recommend with partial mashes. Adding water will dilute your og. So you want to start with a pre-boil volume and boil down...
