Yeah, you got to wait for that cool break. I dont put wort in the fermenter until it is 78o... Cool it down and let it ferment!! Even if you have to use a secondary.

The problem with cherry extract is it is too strong. Its like using Maraschino cherries. If the syrup content is a concern, you could always use the light cherries or no syrup types.

Don't use plain sugar. I would use DME's, More Malt, Rice Sugar solids(has no flavor, but plenty of kick),corn sugar, honey, maltose, fruit, or any other fermentables.

You want to follow the temperatures and times as close as possible, but it doesnt have to be 100% accurate. As long as they are in those ranges. You get certain fermentable and non fermentable sugars...
