Just let it ride until you are sure it is done, let the chunk of trub dislodge itself, then collect like normal.

When I am in doubt if I have gotten all the trub and perhaps started dumping...

Don't worry about the short air contact time when bottling and secondary if really only necessary for certain beers.

The amount of the maltodextrin (8oz) and aged hops (4oz) were for 10gallon batch.

I decreased the amounts of LME and DME but didn't change those...=)
