Sounds like a simple, tried and true winner. Set your SG @ 1.100, and the CdB yeast will finish it dry. It's what I use almost exclusively, and it'll run up to 15% easy.

Yes. You are fine to skip it. I only use Oxyclean when I have to remove labels, or they've come from the recycling center (and god knows where they have been, what they have contained)

I vote to ferment until yeast tuckers out, measure FG, and calculate your ABV. Then bottle it as a "sweet watermelon wine".

1 pour is not the end of the world. You'll be OK. Oxidation is a long-term thing.

If so, as you taste it, you'll have less sugar and more alcohol. Exactly the flavor change you are describing. Perfectly normal. Make sense?
