You could always try cold crashing the fermenter....

You could always try cold crashing the fermenter. That should slow if not stop the fermentation. The yeast wouldn't have had a chance to finish there job however (i.e. cleaning up).

I should also note that I plan on starting to use Phosphoric acid in my sparge to ensure that my lighter styles don't get impacted by the lactic. Phosphoric is said to be tasteless.
