I single hopped a Saison (Wyeast 3711) with 1210. So far it is very nice. A mild citrus/grassy note from 1210 but it needs to condition a bit more.

I haven't used my 6300 or 5256 yet.

I would say bottling conditioning anything but ya it does seem like a small niche. Maybe it's aimed more at breweries than at homebrewers? I'd be interested to know the yeast source/relation.
