Definitely do a D-rest now. It'll lower the gravity, and you'll otherwise have Diacetyl in your beer.

I made the starter on Friday, brewed on Sunday (wanted to brew Saturday but something came up) and pitched the yeast at 42-43℉ on Monday. By Tuesday morning I had a small amount of foam on top, on...

In the meantime, my 2124 pilsner is happily bubbling away at 44℉. I made a big starter with my re-used yeast. It's a shame the OP didn't live in the NYC area, I had plenty of yeast.

Thanks for the replies and encouragement. I'm thinking I'll do a half batch and leave it in the fermentor in the fridge while the keg empties as I suggested above.

And I just checked the...

I did have one thought, I'm fermenting the brew in a pair of 3 gallon Better Bottles that fit nicely in my fridge. I could transfer one to the keg, and then rack the other into the now vacant and...

Citra dry hop in a Pils?

I've got 5.5 gallons of Pilsner fermenting away right now in my fridge, but I'm thinking I'd like to try something different with it. The recipe is:

9.5lbs German Pils 2-row
1 lb Cara-pils
.25...

April yeast is getting pretty old. I'd also wonder if your reading is due to settling. I'd still have a plan B.

There are homebrew shops in Rhode Island. At least one of them must have 2124, it...

I used mine this weekend for maybe the tenth time. When I went to pull it out I thought for sure I had ripped it catching onto my Brew-mometer. But no, all was fine.

While it may not outlast...

You could try raising the temp a degree or two or three.

Also, what was the date on the yeast? Was it fresh? If not, you have even less than you thought.

You can try to make a quick starter...

I make a large starter with that yeast and pitch cold, around 44-45. 2 packs for 10 gallons just isn't enough.

That's not the first time I've seen Wyeast auto-corrected to Wheats.

I made my Fat Czech Pilsner today. I started at 6am, and just finished at 12 noon, so 6 hours. I almost bought that SP-10 burner to cut the time, but in the end it wouldn't have mattered because I...

How does falling temp impact mash?

I just started my mash step, adding about 10 lbs of grain to 24.88 quarts of water at 156.3, all by Beersmith's calc. According to Beersmith I should get a temp of 150 after addition, but it didn't...

Is your mash holding your temp? If you start at 151 and it drops to 148 you'll get a thinner beer. If you start and hold at 151, you are still at the low end. If you start and hold at 153 maybe...

The big problem with that is you won't be able to break the nutrient pack inside. Just use the yeast soon, make a starter if you're worried.
