Is it a constant gurgling as you open the tap handle and foam constantly comes out or does it just do it at the beginning and then pours solid beer after a second or two?

Bingo! Yeah, I really don't care for those smack packs. I prefer White Labs, just shake it up and pitch after letting it warm up obviously. I know AHS partners with Wyeast on a few of their own...
