My process with that starter was a bit weird. I made the starter,...

I've done a few now and I let them sit for about 7 weeks in primary before bottling or kegging. 3 were dry hopped and 1 was not. 2 were kegged, 2 were bottled. The ones in the kegs were drank...

No offense, but I know what whirlpooling is. I've been brewing for many, many years. But never heard the term hop stand.

But, no, that is not what I did. I chilled the wort immediately. I...

I have no idea what you mean by hopstand. I don't whirlpool. I just dropped them all in there after I turned the flame off and they sat there while the beer chilled, for an hour or something. ...

Update? Which Brett did you use?

I made an Imperial IPA with zero ibus with a mixed Brett fermentation. 100% Brett, but with both Brett Brux and Trois from White Labs. All hops added after KO,...

Been a while, so figured I would report back on my experience with using wine yeast in that beer I previously mentioned. Wasn't a Saison, but a Belgian IPA.

So after what I wrote before, I did...

I've used it a few times and while I haven't done any real comparisons, with the latest batch the starter was pretty acetic-sour.

The other times I've made starters in three steps, with a few days...

Naw, it's not the bitterness. I think if I were to do this again, I would ONLY use Brett Trois. I think the mixed culture somewhat diluted the strong fruity character that most people love from...

Sorry to hear it. Don't give up! Mine did 83% and 87.5% on the two beers I made with it so far. Tastes great as well, though a pretty bitter finish for so low of ibus.

It's worth giving it...
