Did you do a secondary fermentation (ala re-pitch yeast a second time) or did you transfer to a secondary? And with the extract when did you add? Sounds good...

Add more extract... but then balance kind of goes out the window. You can add more speciatly grains to try and counter, but you should remember that most recipes are based on multiple failures...

I don't believe the airlock was stuck as it was still bubbling when sloshing the wine around.

My guess would be it was still fermenting/I didn't degas it. I don't take hydrometer readings on 1...
