Then you'll need a sight glass. Nothing says you can't drill through the first wall of the cooler, strip out any insulation and install a weldless sight glass. I bet a search would find some people...

Your pressure cooker should have a blowoff port (rubber thingy in a 1/4 or so hole in lid) so there shouldn't be a fatal mess, but watch yourself nonetheless.

If you're actually at .995, put er in the fridge for a couple days then transfer to tertiary. You'll probably have another 1/8" or so layer of sediment drop in tertiary. I'd bottle after a few weeks...

You want some funky esters in that beer anyways, which is the primary effect of under pitching (or pitching old yeast), you might have a slow start but your beer will be fine.
