I just got a 1.75 gallon mini keg. Most of my batch is going into the keg, but I will have a few bottles. I plan on naturally carbing.

Ferment bucket smell after cleaning....

Is it normal for the bucket to carry a slight smell of the previous brew? I've washed it thoroughly and I can't lose the smell. Is this normal?

Not enough boil off - question

I just bottled a 2.5 gallon brew and ended up with a good amount of beer left over. Probably 40-50 oz. I'm assuming I did not boil off enough.

Will this ruin my beer?

Very good point about adding sugar. Didn't think about that. I have a spigot on a bucket in my current setup, I just transfer from the fermenter to it.

Currently I siphon from my fermenter to a bottling bucket, this fermemter could eliminate that step. This is for 2-2.5 gallon batches, which is what I've been doing anyways. Thinking about trying...

I may have explained it wrong. I wasn't talking about doing a partial boil. I was wanting to cut a recipe in half and just do a 2.5 gallon batch.
