I don't think I can find any rice hulls here. Would any cellulose material do the job? As in lettuce leaves or similar?

Or would steeping the grains in a mesh bag prevent that?

I decided to pop a few of the bottles and sprinkle a little turbo yeast in. Hopefully that'll dry them out and carb them up. I'll find out in a few weeks.

I wouldn't worry about it myself. But if you do add some acid, be careful. When adding after fermentation, a little bit of acid adds a whole lot of pucker.

pH is a measure of your acid. Just follow that. Any base you add to neutralize will create water and salts. I don't know what that'll do to the taste, but I'd guess it'll change it somehow.

For mine, turns out that 2 weeks just wasn't long enough in the bottle. The beer tastes fantastic now and seems a little better each day.

I figure I could use oatmeal or cornstarch as the fermentable, but there's still the problem of no hops.
