Key limes, lemons, regular limes, all seem pretty much the same to me in all batches I've tried. Just some acid.

It should be drinkable far faster than apfelwein imo.

I'd go lower...

Nah I'm pretty sure its the fermenting temp too - I've done apfelwein with the same juice and had the same experience as you. Also did a cider with S05 that started out with a similar medicine taste...

It wasn't exactly cider but I did put about 2lbs into a graff (gluten free style, sorghum malt). Plan on cracking some this weekend for the first taste. Oh I used dark, not amber.

Its apple season, and this year I thought living in Washington and all I need to search for some pressed cider to use.

1 GAL is annoying if you have a lot of lees and stuff on the bottom - you end up losing a deal of liquid which is a lot for something small like a 1gallon.

I am thinking about giving it a try to make some young ciders drinkable, earlier. While I do like the acid bite when I'm putting down a session cider the young tartness+carbonic acid almost puts it...
