From what I've heard, the least amount of time you need to wait is 18 hours. A full 24 hours is recommended.

I had occasion to visit the 2nd Street Market just outside of downtown Dayton. Their honey seller is selling 5lbs for $12.25. Best price I've seen since I started making mead.
