Possible infection - but what is it?

I've been brewing for a few years and haven't had an infected batch yet. I did a low gravity (1.040 or so) mead which was fermented in a covered bucket with SA-05 and WLP720. It is down to 1.004.

Which yeast to sour with?

A friend of mine brewed an agave Belgian dark strong that he wasn't able to get to ferment out. Rather than dump it, he gave about three gallons of it to me. I'd like to sour it, but I'm not sure...
