Is there any benefit over just capping the bottle? Also, if i was to go this route, is this the right size cork to shove down the bottle before throwing on the 29.5mm cap?

Turkey for easter and Pastrami for sandwiches next week. First time hot going hot and fast on the brisket and it worked quite well. Bird cooked in 2.5 and pastrami cooked in a little over 3 hours.

i did an old kit (2 years plus). I made a starter to get the yeast cell count up but the beer came out great. It will be fine as long as you can grow the yeast to a pitchable amount.
