Actually one of the reasons why acid blend is not added up front to a mead is because during fermentation the PH can take a wild swing downward thus stalling out the yeast.

Hmm, so it seems to me the trick would be to use as little honey as possible in the boil so as to maximize the hop extraction and simultaneously minimize the damage to the over all honey aroma.

I highly recommend not boiling your honey. Mainly because you risk losing many of your delicate aromatics. At the most try gentle heating (120 ish F) to warm it up so it is easier to work with.

Raw honey is what is best for making mead. One thing to consider is if you want to use special varaties of honey. The difference between say meadow foam and say clover are incredible.

My one recommendation for this mead would be not to boil the honey. When you boil honey you can lose a lot of delicate aromatics.
