Stalled fermentation

A buddy made a Rye IPA the other day.

Making 15gal

We kept 10, another guy took 5.

I don't know the full grain bill or temps so on but here is the little I know

Id let it stay in the primary longer than that. 2-3 months.. Watch your sg. Mead is a slow moving creature. Nothing like beer.

Oh gosh. Just tighten your bung. The co2 is prolly getting around it somehow. Forget the airlock. If its not bubbling, it means nothing tbh. If you used 1118, it could ferment a sugar cube in lava....

I racked onto 2oz hops when it sat a 1.01 for a few days. The second I racked, action kicked up again and it's been rolling in there for like 3 weeks now.

I'm not even judging...

I just think that putting bread yeast and orange pith in a quality drink is rubbish. It costs the same to buy wine yeast and 10 min to peel and zest the oranges.... 10 min to remove 2 huge factors in...

Yeah I agree with being scared of trying to a little over max your yeast. I mean, If you happened to have really good conditions and enough nutrient, you can make a 12% yeast eat up to like 14%.......

Slow start?

Made my first stout last night. Aerated well, and pitched nottinghead platinum ale yeast. It's been 8 hours and still no activity at all. Problem?

It was 75 degrees when I pitched.
