If that's what your after I'd drop the carapils (mash a little higher to get the same effect) and just do a Golden Promise and Mt. Hood SMASH. Wyeast NW Ale is neutral enough for that IMO.

Ah that was only my experience! Don't be scared. Just don't be afraid of calling out a popular beer burgeoning on the edge of a current trend (big beers, huge flavors, etc) if you don't like it.

How much head space are you leaving?? There should never really be a need to use Ascorbic acid....My guess is that problem lies outside of bottle conditioning. Ascorbic acid is a pure upsell product.

In the last 5 months I've really started getting fit and lowering what was a high blood pressure reading, and as a result, I've drank a LOT less beer in order to meet my lessened caloric demand....
