All - I completely agree that fermenting in barrel is likely a disaster.. the lack of headspace, the blow off, and the lack of alcohol to prevent bacteria are all really good reasons not to do...

Great thread. I find most pumpkins to be nothing more than a spiced beer, which I am not as big a fan of. I want PUMPKIN flavor, not cinnamon and nutmeg beer!
