When you start to get over 1.050 or so, maybe think about starters and/or pure o2 and yeast nutrients.

i'm guessing you'll still get significant esters with that yeast, especially if you didn't add any oxygen. if it is bland, a few liters of "highly estery wort" in a 5g batch isn't going to matter...

i'm not sure, either, but i have seen some data that show honey (often, not always) has bacteria and even wild yeast (i think) but that it can't grow at all or contaminate the honey.
