Tocabaga is Tim Ogden's recipe. He's one of the brewers at CCB. It's dry hopped only with Citra, btw. Also, they switched their yeast from 1275 to London ESB 1968, and they no longer filter it...

You don't have to make a starter if the yeast is a slurry that's been recently washed. Obviously do a starter if it's fresh from a pack, and if you're not going to wash it, it would be a good idea....

Just gotta chime in and say the last 2 posts were amazing. On top of that, I'm getting a 7 cuft freezer this week for my birthday. Gunna use it for fermentation as I have a 19.7 cuft already built...

Are you afraid that you have too much roast and caramel? Because some of the best RIS that I know of have way more specialty grains than you do. In other words, you should be fine.

I'll reserve judgement on coffee in an IPA until I try it, but I can't seem to imagine it'd be any good.

Wood in IPAs are great. Cigar City has had great success using spanish cedar and white oak.
