I have used this yeast before and had to repitch with lalvin on a dry cherry mead. I would recommend that, or add another pound of honey- or better yet do both.

DME Substitute

I have a Belgian Lambic partial mash recepie that calls for 5 pounds of Wheat DME.

Can someone suggest an all grain substitution for the DME? The only other grains are 8oz carapils and 8 oz...

You can use the same regulator if the thread fitting is the same type, but it looks like you have multiple lines and would want a separate tank and regulator. I don't think beer stores sell 100% N2....
