Step bits were such a pita to use. A good hole saw was easier and procuduced as good of a hole. Unless you're using the step to just get started and then using a punch.

Make sure to keep the bottles around 63-65 and let it carb slowly. If you bring it up in to the 70's I've had some issues like that. Switched to kegging since though so has been awhile.

For 5 gallons you should be using 2.5oz of DME for ~1.5 volume if the beer had completely fermented out. Did you cold crash before priming? What temp are you carbing at?

I don't think this would be true. Yeast will create different off-flavors depending on if it is eating maltose (LME) or sucrose (table sugar).

Using wlp500 the yeast wanted to rise naturally...

Using wlp500 the yeast wanted to rise naturally up 10* over a week and it worked well. Just don't let it get over 80*.

Is the AVB at or close to 1.000? If so don't worry about adding more. If the final gravity is higher 1.005+ I would add potassium sorbate to inhibit the yeast growth before bottling.

The only consistence was to force carb with this yeast. The 1318 yeast is great for bottle carbing. You could try to bottle condition with wort instead of sugar if you really want to use 002.
