Kicking up the dust here, but in Canada we brew 5 Imp Gallon batches, which is 23 liters. That's why the excess. But, on the flip side, we get more beer :).

Also in Stowe, there's the State Liquor Store. They had a good selection of Dogfish Head beers if you're into that. Bitches' Brew & Hellhound (both seem to be getting more & more hard to find).

Absolutely. You ferment the whole 5 gals, and not jsute the 3, right?

Adding water will dilute the wort, and lower your SG. Take the reading of the whole 5 gallons.
