A Refractometer is a good addition and invaluable from the Mash through the boil. But you will still need a hydrometer for fermentation as the refractometer isn't accurate when alcohol is in the mix.

When I was doing extracts as partial boils I would always boil up a couple of extra gallons the day before and chill it in a fridge overnight. Helped with the cooling this way as well.

I don't know anyone who freezes, but some who can. I do neither, generally use slurries and then if it's not in my library I will do a starter with dry extract.
