Sure it will. The one issue - potentiometer will work only a half way. On a first half turn (starting from the minimum) you will have no output.

Some temperature probes are not really water tight. So some omount of liquid can get in IDE. And its causing wrong temperature reading.

I'd still recommend to spend a few more dolalrs and buy 22 or 18AWG wire. It saves you a lots of wiring efforts.

I wouldn't do it. Yes you are replaced a breaker to handle 30A but wiring still is for 15Amp. Yes National Electrical Code is very conservative so most likely your 15A rated wiring will handle 22A...

I have a few same switches in my possession. Yes, they marked 3Amp, but I wouldn't trust that rating considering how this switch is manufactured. It's a very fragile.
