I always use fresh chilies in the secondary. If I want more heat, I will leave the seeds in as this is where most of the capcasin [sp?] is located. If I want more chili flavor I remove the seeds.

I enjoy traditional meads from Orange Blossom honey but I have never used avocado honey. I did make a traditional from buckwheat honey which is rich and dark and after a few years it is wonderful....
