Should be fine. At that temp, it'll take awhile to get the grassy notes. My IPA kegs never last long enough for that to happen. Good luck!

It'll probably be fine. Mine cleared up quite a bit after a week. I'm sure it'll be okay, maybe a bit yeasty but that'll clear after bottle conditioning for a few weeks.

I do the same thing, but don't have the ability to do a starter bigger than 2L at a time. So I slide the growth rate until I get a starter under 2L, then buy that many vials.
