Yeah, for some reason this recipe always ferments way out - the FG in my original post was 1.002.

I like how dry it gets, though. It's super refreshing with the ginger and lemon.

Got another full pint of yeast out the dump today (6th day of fermentation). SG is 1.011, which is just what I'd expect from Wyeast 1968.

Also: I love drinking my samples :)

Thanks for the input gang. I think I'm going to go with something wider, especially since I need to cross a threshold with it. It is surprisingly stable with the 5 wheels, but I don't trust it.

The real solution is to dump smaller amounts of trub earlier and more often to prevent the yeast cake from compacting so thoroughly. After two weeks it should be a pretty tight cake, and it's not...
