Ive made a lot of good smoked beers and a lot of good hoppy beers. I hop you have better luck than I did!

For some strains it can make a big difference in reducing diacetyl (1968, etc) or in some cases other off-flavor compounds. Also assists in ensuring fermentation is truly complete.

Another option would be to brew up an IPA and add x % of that really bitter wort into your saison. 1/2 gallon of 80 IBU into 5 gallons adds about 8 IBUs.

Much of the sugar in the starter will be consumed in aerobic (growth/budding/multiplication) activity instead of anaerobic (pissing Alcohol and CO2) so the entire flavor profile will be different...

I don't agree with this. I feel you should pretty much always decant your starters to avoid the off flavors that can come from multiplying yeast.
