Next time you could reserve some of the Unhopped but boiled wort to use in a starter and pitch after 12-24 hours when activity has peaked.

For future cold crashes, I suggest CC in primary and no need to heat it up. Definitely don't forcefully heat it. I always bottle cold after a CC and it works great.

This year I dialed it back a bit to OG of 1.107 but if it hits my target FG of 1.015 it will still be just over 12%
