I underfill cornies all the time. I don't see why there'd be any problems. After all, the volume goes down as you drink it. Especially if you purge with CO2, you'll be cool.

Yep. Botulism grows in unfrozen, unrefrigerated foods. And you can't taste it. And it kills you. So, it's scary stuff in improperly canned foods stored for a long time.

You can ferment smaller batches in larger fermenters. No problemo. The ferment will generate CO2 and displace any O2 you might worry about.

Not to state the obvious, but...whole hops...they are superior to pellet hops in every way, except size, but as homebrewers we needn't concern ourselves with the displacement of hops in the kettle....

Personally, I avoid bottling at all cost ;)
