if 3 out of 4 were still pressurized after 5-6 years, consider them good. Clean them out well, and replace all of the o-rings. The 4th empty one will probably be good as well, but worry about that...

I answered #1 Everytime I brew but in actuality, I never secondary ferment. I have 6.5 gallon carboys, and use them for my primary fermentation, then straight into a keg.
