The honey and brown sugar likely dried it out a bit more than you were expecting. I usually add Lactose to my chocolate stouts to add a little sweetness and body, so it doesnt end up so dry.

Nothing at all wrong with using an aluminum pot. Clean it with a mild detergent, with a soft sponge. Been using Aluminum pots for a long time. with the money spent on SS, I can buy alot of much more...

I doubt you'll have bottle bombs, unless you used an abnormally high amount of priming sugar. Ill agree you left alot of beer in that carboy. looks to be a gallon or so.. Bottle that up!

I wouldn't go past 7 days. From my experience I get alot of grassy character when I leave a beer on the hops for more than a week. I dunno maybe others have had different experience?
