I've been giving batch #2 a swirl and it's finishing off nicely. Here in Australia we almost universally use barrel shaped FVs with screw on lids and these lend themselves to using cling wrap instead...

WLP090 San Diego not so Super?

Since November I've been using Whitelabs new San Diego Superyeast and have had excellent results. Mind you it's not the rocket that was claimed originally, but does a similar clean job to Wyeast 1056...

Something I've not been able to find a definitive answer to:

We add Crystal and Cara- malts such as medium crystal, carapils (carafoam) etc, not just for the flavour but to add body and foaming...

Gelatine will floc out yeast. However chill haze is caused by polyphenols. They can be removed using Polyclar - this is how we buy it in Australia, I expect it's available in the USA...

Tannins shouldn't be a problem, I don't know about the USA but in the UK and Australia in particular some of the mainstream breweries use massive grain filter presses to wring out every ounce of wort...

Rather than use an oven, have you thought of using an insulated picnic type container with a water bath, and mash your grain in a big lidded kitchen container? Probably kit you already have on hand....
