How much head space are you leaving?? There should never really be a need to use Ascorbic acid....My guess is that problem lies outside of bottle conditioning. Ascorbic acid is a pure upsell product.

In the last 5 months I've really started getting fit and lowering what was a high blood pressure reading, and as a result, I've drank a LOT less beer in order to meet my lessened caloric demand....

I added both near the end of the boil. Also, I did bottle condition in normal bottles. Expect to wait about 6-8 months for this to get really good.

adjusting with temps for additional esters and phenols is much more effective than under pitching, from my experience.

3522 at those temps, I did that for my first ever semi-successful bath, I got lots of bubble gum and phenolics. I think you'll be ok.

If I want something clean I use 1272 or 1007. I've found them to have a more pleasant taste than us05, notty, and other dry I've tried etc...

I did not get any visible activity on mine either...

I did not get any visible activity on mine either a while back but I did get a nice small layer of yeast at the bottom after a week or so.

Start simple then work forwards IMO. Do a Saison 100% pils, add something, then something else, etc. It's a bitch to work backwards if you don't get a hole in one.
