Nothing you can do now except learn from your mistake. Once it is properly carbonated I would try and enjoy as soon as possible as the older the beer gets, the more the oxidation will be present.

I second this. Some of us are really sensitive to carbonic acid, which is what is formed when co2 and h2o interact. With time it will pass. So if it doesn't, obviously, it is another issue.

This is poor advice. Straining the beer after fermentation will add tons of o2 which will oxidize the beer and leave it tasting like old, wet cardboard. Cold crashing works great.

Obviously I don't know your boil off rate, but I would bet you are going to boil off more then 1/2 a gallon in 60mins. I usually loose at least a gallon in 60mins.
