I've read that 2 ounces of medium oak is standard...

I've read that 2 ounces of medium oak is standard for a 'normal' beer. A RIS or other high gravity beer may require more.

Check your local Walmart. Mine has the Jack Daniels bourbon oak 'smoking...

I am planning a 10%+ ABV beer destined for bourbon oaking.

Given the same toast and type of oak, is there much of a difference in chips, cubes, spirals, sticks, or?

Back to 001 v 007. 007 attenuation is 70-80% while 001 is 73-80%.

007 being a dry ale yeast, wouldn't it dry it out more than 001?

Scaling the recipe to 11% and higher IBU (not sure). I may perhaps use medium oak, 3-4 ounces, with Maker's Mark.
